Waldorf Salad with Peanut Butter Dressing

Peanut butter gives a yummy twist to traditional Waldorf salad. We all love to dip our apples and celery into peanut butter, so why not turn it into a salad?

I can't take any credit on this idea though. A local restaurant has a very similar salad on their menu. I just recreated it at home. It is so good!

If the thought of mixing peanut butter and mayonnaise together grosses you out-- don't knock it until you try it! Trust me you don't taste the mayonnaise! And I really do not like mayo! If it is in potato salad, chicken salad, etc I'm good. But you'll never see me smear that on a sandwich!

I use all natural peanut butter with no added sugar. Just peanuts and salt. With honey in the dressing and sweet apples, this salad is sweet enough!

If you want a little extra crunch, toss in a few roasted peanuts.

Waldorf Salad with Peanut Butter Dressing

1 large red apple (or 2 small) diced

2 celery stalks chopped

1/4 cup raisins

1 tsp lemon juice

1 Tbsp mayonnaise

1 Tbsp honey

1 Tbsp peanut butter

Toss the apples in lemon juice. Add celery and raisin.

In a small bowl mix the mayo, honey, and peanut butter.

Cover both and chill. Mix in the dressing before serving.

(If eating right away, go ahead and combine)
