Spicy Lentils

Lentils are not one of those side dishes that usually make a weekly rotation in many homes. But why not? These little legumes are rich in protein and fiber. Something we all need a good amount of. They can also be prepared in a variety of ways and flavors. Lentils can be red, green, or brown. I have not really noticed any difference in the texture or flavor of the various colors, so I don't have a preference to either.

I like to simmer lentils in broth and spices and serve over rice. It really makes a hearty side dish. If you cook lentils often, comment below and share how you like them!


Spicy Lentils


1 cup lentils, rinsed

3 cups chicken broth

1 small onion, chopped

1 clove garlic, minced

1/2 tsp salt

1 tsp black pepper

1/4 tsp smoked paprika

1/2 tsp turmeric

1/2 tsp curry powder

1/4 tsp crushed red pepper


In a medium- large sauce pan, heat 1 Tbsp butter and saute the onion and garlic until soft. Add the remaining ingredients. Stir. Cover and simmer on low for one hour. Stir occasionally while lentils are cooking. Serve over rice.
