Slow Cooker Carnitas

It has been a while since I last shared a recipe with you.

Life is busy out here with teenagers (one graduating in a couple of months), home projects, family, and my health coaching business. But it has all been a "good busy".

I know the Lord doesn't want us to get overwhelmed and stressed out, and because of that, I have to put Him first in everything I do! He has control over this life!

We are knocking out our pork supply from the hogs we raised. I'm gonna tell you-- home grown pork tastes a lot better than store bought! There is a lot of work that goes into the process of raising pigs--- more so the process of slaughtering and butchering. But once you taste the end result you know why it's worth it!

We aren't currently raising any, but after using my last roast in this recipe, I'm thinking it is time to bring more to the farm!

Start out by browning both sides of a 3 lb boneless pork roast in a little olive oil.

Place in slow cooker with sliced onions, broth, lime juice, and spices.

Cook for 5 hours on high then shred.

Shred it on a separate plate then return back to it's juices in the slow cooker. Serve over spaghetti squash for low carb, grain free meal. Or serve with tortillas. They also make great loaded nachos!

Top with your favorite toppings like pico, avocado, and black beans!

Slow Cooker Carnitas

3lb boneless pork roast

1 Tbsp olive oil

1 small onion,thinly sliced (or use 1 tsp onion powder)

1 Tbsp cumin

1 Tbsp chili powder

1 Tbsp paprika

2 tsp ground coriander

2 tsp garlic powder

1 tsp sea salt

1 cup chicken or vegetable broth

1/4 cup lime juice

Heat olive oil in pan on stovetop. Brown both sides of roast. 2 minutes each side.

Place roast and onions in slow cooker then sprinkle spices all over roast. Add broth and lime juice. Cover. Set cooker on High for 5 hours. Remove and shred then add back to juices and enjoy!
