Pork Chop Sheet Pan S
Gosh, it has been a while since I've last written. I had good intentions. I actually made this dish a couple of weeks ago. But, as we all know, life happens and we just don't get it all done all the time.
What I love about sheet pan meals is the convenience and easy clean up! They are also a great idea for summer because you aren't heating up the kitchen with several pots going at once. And it is super easy for busy week nights.
I made this one with pork chops, but chicken is a good substitute also. And really, you can use whatever veggies you like. I had broccoli and sweet potatoes on hand and I think they go really well with pork. Pork does not take long to cook at all, so I just began cooking the veggies for a few minutes before adding the chops. If you use chicken, you probably need the entire cooking time.
Pork Chop & Veggie Sheet Pan Supper
6 pork chops
4 cups peeled and diced sweet potatoes (3 small)
4 cups fresh broccoli florets (1 sm head)
1 sweet onion, sliced into wedges
1 lemon, sliced
1/4 cup olive oil
1/2 tsp black pepper
3/4 tsp salt (plain, pink, or seasoned)
For Pork Chops
1 Tbsp olive oil
1/2 tsp black pepper
1/2 tsp salt
1/2 tsp smoked paprika
1 tsp parsley
Preheat oven to 400 degrees.
Line a sheet pan with foil and spray with cooking spray.
Toss all the veggies (do not include the lemon slices) in the 1/4 cup olive oil in a large bowl. Sprinkle the black pepper and salt on veggies, toss again. Next lay the veggies on the sheet pan. Place the lemon slices on top.
Bake for 15 minutes, stirring once halfway.
While the veggies are cooking, prepare the chops. Drizzle 1 Tbsp olive oil on both sides of pork chops. Sprinkle each side (1/4 tsp of each seasoning) on the chops.
Once veggies have cooked for 15 minutes, move them around so you have 6 empty places to put the pork chops. Place the chops on the pan and sprinkle pork and veggies with 1 tsp parsley. Bake for 15 minutes. Turn the chops over and bake another 5-10 minutes---- until the pork chops are done.
This is a delicious and nutritious meal. Play around with different meats and vegetables. It is also an easy meal for kids or teens to help prepare.
