Kale Salad

I love a good salad. Any time of year. And it is so important for us to get plenty of veggies into our bodies. I had bought 2 bunches of curly kale at the grocery store the other day because it was so pretty and I love it! I like to make kale chips, saute kale, and also add it to my smoothies/shakes. Yesterday I decided to make a kale salad and it is so good!


Kale has so many benefits. It is a good source of fiber (hello, we all need a little more fiber). It is also rich in vitamins as well as antioxidants.


With just a few simple, healthy ingredients, a kale salad makes a perfect side dish, snack, or even a main meal by just adding some chicken, a boiled egg, and/or avocado.


KALE SALAD

1 bunch of fresh curly kale--- washed, torn away from stem, and chopped to yield 8 cups

1 cup shredded carrots

1 cup diced apple

1/2 cup raisins

1/2-3/4 cup toasted and chopped pecans (or walnuts)


DRESSING

2 Tablespoons avocado oil (or olive)

2 Tablespoons apple cider vinegar (you can also try balsamic or red wine vinegar)

1/2 teaspoon honey (or maple syrup)

sprinkle of salt and pepper


INSTRUCTIONS

Massage kale in a large bowl with your hands. This helps to tenderize the kale and also brings out a rich green color.

Next add in the carrots, apple, raisins, and nuts.


Whisk all dressing ingredients together in a measuring bowl/cup.


Pour dressing over salad and mix well. Refrigerate and enjoy!
