Easy Apple Pear Crisp (Instant Pot)

This past weekend my family and I spent some time in the mountains. We like to go each fall to the apple orchards and buy bushels of apples, some pears, do some hiking, and just relax. It was a really enjoyable time, well except when I get car sick, and the weather was just right.


There is just something about those fresh mountain apples. They are so much better than what we buy in the grocery store. It is probably just because they are in season. My favorites are Fuji and Honeycrisp.


Today I want to share with you an easy recipe for apple pear crisp made in the electric pressure cooker. This would be a great warm dessert to have when you need something for unexpected company, to take to a potluck, or just when that sweet tooth kicks in and you want something fast! It is warm and cozy and hits the spot with a dollop of ice cream on top. If you don't have pears, that is ok, just use all apples.


It "bakes" nicely in the Instant Pot and transfers well to a serving dish. I like to use oat flour in the topping, but you can use any type of flour. I also choose to use coconut sugar, but brown sugar will work well too. There is quite a bit of butter in the topping, but it is a treat! This can cook while you are eating supper and then you can have a nice warm dessert ready for when you're done.

APPLE PEAR CRISP (INSTANT POT)


INGREDIENTS

3 medium apples

3 medium pears

1/2 cup apple cider (or apple juice or water)

2 tsp cinnamon (heaping if you like cinnamon like me)

1 cup of gluten free oats

1/2 cup oat flour (or flour of choice)

1/2 cup coconut sugar (or brown sugar)

1 stick (8TBSP) melted butter (I use Kerrygold. Because...Kerrygold)


INSTRUCTIONS

Thinly slice apples and pears and place in pressure cooker pot. Sprinkle cinnamon over fruit and. Pour in the apple cider (or juice/water). Give it a stir.


In a small bowl mix the oats, flour, sugar, and melted butter. Spread on top of apples and pears. Put the lid on and lock it. Set the pressure cooker to Manual, High pressure, 8 minutes. Once it is done and beeps, let it naturally release pressure for 10 minutes. Quick release the pressure after the 10 minutes and carefully spoon into a serving dish. Serve with vanilla ice cream and enjoy!!
