Apple Cranberry Steel Cut Oats {Instant Pot}

I've said it before, I love my Instant Pot. Some recipes may not seem as if any time is being saved in the pressure cooker, but with an electric pressure cooker there is no standing over a stove. Push a couple buttons and go fold a load of laundry. That's it. We certainly live in a world where convenience is desired and multi tasking seems to be necessary. I'm not saying this is the way we should operate all the time, but I am saying an electric pressure cooker helps.

This is such an easy recipe. From start to finish it takes about 30 minutes. So it is doable on any morning of the week. Put all ingredients in the pot, push the button, then go get ready for work or church.

I like the texture and firmness of steel cut oats. They also are a great source of protein and fiber,which we all need. Oats are so versatile too....top them with whatever you like!

Apple Cranberry Steel Cut Oats {Instant Pot}

1 cup gluten free steel cut oats

2 cups water

1 cup milk of choice ( I used unsweetened almond milk)

1/2 teaspoon cinnamon

dash salt

1 tablespoon coconut sugar

1 small-medium apple, diced

1 cup fresh, whole cranberries

Rinse cranberries. Combine all ingredients the pressure cooker pot. Stir. Set pressure cooker to manual, high pressure 3 minutes. Let release naturally. Stir well.

You can add a little more sweetener after the oats are done, if you like. These were just right for me with 1 tablespoon of coconut sugar. Brown sugar will work also. Get creative and top with chia seeds, flax seeds, or nuts!
